Cod Recipes
Baked Cod Rarebit serves 4
Ingredients;
4 portions Cod fillet (220g each)
220g mature cheddar, grated
2 tbsp wholgrain mustard
125ml Guinness or beer
1 tbsp Worcestershire sauce
4 sprigs of cherry tomatoes on the vine
2 tbsp basil oil
Method;
1 Heat the oven to 200C/400F/Gas 6
2 Lay the portions of Cod onto a lightly greased baking dish
3 In a bowl add the cheese, mustard, Guinness and Worcestershire sauce and stir well
4 Spread the cheese mixture in a thick layer over the Cod fillets
5 Place in the oven and bake for 25 mins
6 Place the cherry tomatoes in an oven proof dish and drizzle with the oil, roast for 10 mins
7 Lift the Cod off the baking dish with a fish slice and serve on a hot plate with a sprig of tomatoes on top
