Frozen Irish Scallops

          

Our scallops are caught using traditional methods of dredging and landed directly into our factory. They are then shelled and processed and frozen to lock in its natural flavours. These are ideal as a starter or as a main course using the simple recipe below.

RECIPE

Scallops with White Wine Sauce


Ingredients:

220g Scallops
250ml vegetable or chicken stock
125ml white wine
2 spring onions (chopped)
2 cloves of garlic (crushed & chopped)
100g butter
1 tbsp olive oil
1 lemon (juice only)
Salt & Pepper

Method:

In a pan over medium heat, bring the stock, wine, lemon juice, onion and garlic to the boil.
Continue boiling until reduced by half.
Stir in the butter until melted.
Heat the olive oil in a heavy based frying pan.
Place the scallops in the hot oil, season and sear on both sides for 2 minutes.
Arrange the scallops on plates and pour over the sauce.
