Scallop Recipes
Scallops with a Ginger and Shellfish Sauce serves 4
Ingredients;
2 tbsp olive oil
12 prawn shells
2 tbsp red wine
200ml hot water
2 tbsp tomato puree
2 tbsp cream
2cm piece ginger, peeled and grated
2 garlic cloves, crushed and chopped
2 tbsp tomato ketchup
50g butter
16-20 fresh scallops
2 tbsp chopped, fresh coriander
Method;
1 Heat the oil in a pan and fry the prawn shells for 2 mins
2 Carefully add the red wine (this will flame!), hot water, tomato puree and simmer gently for 2 mins.
3 Strain the mixture into a clean pan, over a medium heat, discard the shells
4 Add the cream, ginger, garlic, ketchup and butter and simmer
5 Meanwhile heat a heavy based, large skillet or frying pan over a moderate heat
6 Cook the scallops for 1-2 mins on each side
7 Transfer the scallops to hot plates and pour the sauce around, sprinkle with the coriander
